The water in the rice fields reflects the beautiful mountains
and the blue sky like a mirror.

We use pure snowmelt water from Uonuma, Japan,
a region known not only for its pristine nature
but also for its world-renowned rice.
This water is classified as ultra-soft,
with a mineral hardness of just 13 ppm —
making it approximately 89% softer than
most drinking water in the United States.

As the snow begins to melt in the mountains,
chunks of ice flow down the river.

Soft and subtly sweet, this water is ideal for fermentation
and brewing,
and plays a critical role in bringing out a gentle depth
and richness of flavor
that lingers on the palate.

Our partner, Uonuma Ison, visited more than
40 different water sources across Japan before choosing
this remarkable spring. The water is a subterranean
flow
from the Echigo Mountains, filtered slowly over
the course of nearly a century through layers of
natural earth.
